Is it too early for a cocktail post? I mean, it IS Friday. This recipe is my absolute favourite, I’m a margarita connoisseur so I’ve got quite high standards when it comes to zesty cocktails, but this one… this one has been crafted to perfection (okay Kate, it’s just a drink).
We had these at our wedding party, and Jo and I designed them ourselves so I wanted to share the recipe. Ohhh it’s a good ‘un!
I love sitting down at the weekend to a film with some chips and guac, and a salted passionfruit marg. It’s the ultimate way to spend an evening, especially with a beaut candle burning and the cats behaving – very rare.
I prefer a marg shaken over ice, rather than frozen or straight up. I always do a salt rim, which just makes the drink in my opinion. I know you might be thinking “ughh nope” to the salt, but give it a try – you don’t need a lot, and you could even just do half the rim, but it really brings out the flavour and makes the drink!
The easiest way to do it is to run the leftover lime half around the rim, and then put out a pile of salt on to a plate and move the top of the glass through the salt. It’ll stick to the lime juice without much effort.
If I’m feelin’ fancy, I’ll use Pink Himalayan salt, but if it’s just an average Wednesday (not really! Okay, sometimes…) I’ll opt for table salt.
I recommend buying a jigger to easily measure the amounts – you can usually get a double jigger which has a single shot (25ml) on one side, and a double (50ml) on the other so it makes measuring super easy.
Ingredients (makes two):
75ml tequila
25ml Cointreau
2 limes (juiced)
50ml passionfruit syrup
All you need to do is add the ingredients above in to a cocktail shaker filled with ice, and then strain in to two salt-rimmed glasses also filled with ice. Easy!
If you’re not doing a salt rim, sprinkle a little salt in to the cocktail shaker and you’re good to go! I promise it compliments the passionfruit PERFECTLY.
Half a passionfruit makes the perfect garnish too, so lay one of those babies on top for Instagram goals.
