Pancake day really is one of the best days of the year! A Tuesday full of positivity, one might say. To celebrate, I finally whipped up a post on my healthier pancakes, a recipe that never fails to go down a treat in this house!
Whenever I’m searching for or creating recipes to blog about, I’m always careful of using the words ‘healthy’ or ‘guilt-free’, because everyone seems to have a differing opinion on what that means. To me, it means low in sugar, full of goodness, and oh so good for you!
You can top these not-so-naughty pancakes with whatever you like, but I love the coconut and strawberry concoction I came up with on a whim! It’s only two ingredients, but they go hand in hand… coconut yoghurt and strawberry jam! It’s such a good pairing of flavours.
I’m usually a bit meh when it comes to healthier alternatives of my favourite foods, but I really think these are better than the standard pancake! Controversial, I know.
Whip up a batch and let me know if you agree!
Ingredients
1 banana
2 eggs
1 cup oats
2 tbsp. ground almonds
1 tsp. baking powder
1 tsp. baking soda
pinch of salt
vanilla essence
1/2 cup milk (any will do, I like oat)
1 cup coyo dairy-free coconut yoghurt
1tbsp. strawberry jam
coconut flakes
strawberries, chopped
Method
Place the oats in a food processor and give it a good blitz, then add the rest of the dry ingredients and pulse a few more times. Next, add the banana, eggs and vanilla and blitz again, before slowly adding the milk.
Heat up a pan with a bit of oil or butter, and lightly fry spoonfuls of batter until golden and cooked through on each side.
Once the pancakes are cooked, add a cup of coconut flakes in to the hot pan and lightly toast until golden.
In a small bowl, mix the coconut yoghurt and strawberry jam until combined.
Assemble your pancakes with a good helping of coconut yoghurt and strawberry mix, with fresh strawbs and a sprinkle of coconut flakes.
Serve up with fresh mint tea and you’re all set!
A heavenly combination! Will you be making these?
