I’ve got another confession to make… I’m a liiiiittle bit hooked on popsicles right now. Maybe because it’s been a bit warmer, but also because I find they’re a nice healthy alternative to ice cream!
Recently I’ve been really struggling when it comes to brightening up my breakfast. I usually look to toast to keep me full until lunchtime, but it gets boring after a while. This meant I had to experiment – I wanted something nourishing, delicious and light.
Something I could eat on the go if I’m headed to the gym, or even over my laptop if I’m having one of those mornings, and so the breakfast popsicle was born!
These are super, super easy to make and you can totally mix them up and create your own combinations. Mine are dairy-free, which is great if you prefer to skip out on cows milk, and I went for strawberries as my fruit of choice.
Peaches, blueberries, mango and raspberries would also work perfectly too. Go wild, create a mix!
Ingredients
Granola (or any cereal of your choosing)
Handful of berries, sliced thinly
Vanilla essence
Yoghurt (I used coconut yoghurt, which I highly recommend)
Coconut milk
Coconut chips
Honey (optional)
Start by taking a popsicle mould and adding a small spoonful of granola in to the bottom.
Next, in a small jug whisk together your coconut milk and a little vanilla essence. Pour the mix in to the moulds, covering the granola.
Add a few berries in to the moulds, but don’t overfill just yet!
In the jug you used earlier, add in five or six tablespoons of yoghurt and a splash of milk – one or two tablespoons should do it.
You can add honey to taste at this point, if your yogurt is unflavoured. Mix it all together until you get a consistency that is slightly runnier than yogurt, almost like cream.
Crush a few of the coconut chips in and stir well. Pour in to the moulds until full.
Place the lid on the mould, add in your popsicle sticks and put the whole thing in the freezer to set. Overnight is best!
