My Favourite Punchy Paloma Cocktail.

A taste of Tulum…

Ever since Jordan and I took a trip to Mexico a few years ago, margaritas have been my go-to drink! I have endless memories (foggy ones, admittedly) of sitting under the stars in our hammock outside our little cabana on the beach, taking turns to get another couple of margaritas from the bar next door. It’s still one of my favourite holidays.

I’ve shared many, many margaritas with you over the years – my much loved salted passionfruit margs, these refreshing rhubarb margs, and even the spicy pineapple version over on my Instagram Stories.
Margaritas have been cocktail of the month for the last 36 months, so I thought it was time to introduce another tequila tipple – the punchy Paloma! A crisp, zesty concoction that ticks every box for me.

I even said to Jordan last night, this might be my favourite cocktail yet. It’s DELICIOUS. Everything I love about a margarita but just that little bit more refreshing.

Your summertime staple…

To make two Palomas…

I recommend a salt and chilli rim – grab a pretty tumbler (I have these and I love them!), and run a lime wedge along the rim. Next, run the top of the glass through a plate with a teaspoon of salt and a pinch or two of chilli powder. Just a little bit – you can even just do a small section of the glass, but I promise it’s delicious.

two limes (juiced)
50ml agave or simple syrup
50ml grapefruit juice (carton or fresh, both work fine)
100ml tequila
sparkling water

Fill a cocktail shaker with ice and add in all the ingredients, bar the sparkling water. Shake until the shaker is too cold to handle, and then strain to your salty glasses filled with ice.
Top with sparkling water and garnish with a wedge of fresh grapefruit.

If you don’t have simple syrup at home, just mix equal parts sugar with boiling water from the kettle, and stir until dissolved. Oh so easy!

All in all, a pretty effortless but seriously satisfying summertime cocktail. Let me know if you try this, it’s my new go-to drink! Perfect with a big bowl of guacamole and a side of tortilla chips too – we always make these when we have any sort of Mexican food.
